Chinese Chicken Wrap


This is one of my favourite fillings for a wrap – it’s a sort of cheat’s version of Chinese duck in pancakes.

Ingredients
1 ½ tbsp mayonnaise
½ tsp soy sauce
1 tsp plum sauce
40g cooked chicken, shredded
25g peeled cucumber cut into matchsticks
½ tsp toasted sesame seeds (optional)
1 tortilla

Method
Mix together the mayonnaise, soy sauce and plum jam. Stir in the shredded chicken and cucumber. Sprinkle over the toasted sesame seeds.

Arrange the filling near one end of the tortilla and roll up. Heat the tortilla (see above) and roll up.
