Apple and blackberry crumble

The queen of English puddings, this is even better if you’ve picked the blackberries yourself.

If not, well, never mind, there are plenty of great fresh berries in the supermarkets these days so use your imagination with a clear conscience: berries are a superfood after all.

Cooking time: 45 mins

Ingredients:

  • 300 g plain flour
  • Pinch salt
  • 175 g brown sugar
  • 200 g butter, cut into cubes
  • 300 g apples, peeled, cored and cut into small dice
  • 200 g blackberries (or other berries), carefully washed
  • 50 g brown sugar

Method

  1. Preheat the oven to 180ºC
  2. To make the crumble mix together the flour, sugar and salt and rub the butter into it to form a coarse breadcrumb like mix, chill
  3. Stew the apples down in a pan with the sugar until the fruit is tender but not mushy, add the blackberries and remove from the heat
  4. Lightly butter a casserole dish and add the fruit mix, then the crumble on top
  5. Bake for 40-45 minutes until the crumble is golden
  6. Serve with ice-cream, cream or custard
