This is a variation on the classic coleslaw. Walnuts are high in Omega-3 fatty acids so make a good alternative to fish if your child doesn’t like it.
Consider an apple a day too if your child is asthmatic. Research shows they help to strengthen the lungs.

Ingredients (serves 4)
- 2 apples, (1 green, 1 red), cored, cut into eighths and diced
- 3 ribs celery, sliced
- 2 tbsp walnuts, halved
- 3 tbsp crème fraiche
- Juice of half a lime
- Salt and pepper
Method
- Toss all of the ingredients together in a bowl, season to taste.
- Serve as a side dish to grilled chicken or pork. It also works well mixed with tuna fish as a sandwich filling.
