Apple, celery and walnut slaw

This is a variation on the classic coleslaw. Walnuts are high in Omega-3 fatty acids so make a good alternative to fish if your child doesn’t like it.

Consider an apple a day too if your child is asthmatic. Research shows they help to strengthen the lungs.

Ingredients (serves 4)

  • 2 apples, (1 green, 1 red), cored, cut into eighths and diced
  • 3 ribs celery, sliced
  • 2 tbsp walnuts, halved
  • 3 tbsp crème fraiche
  • Juice of half a lime
  • Salt and pepper

Method

  1. Toss all of the ingredients together in a bowl, season to taste.
  2. Serve as a side dish to grilled chicken or pork. It also works well mixed with tuna fish as a sandwich filling.
