Coleslaw

Coleslaw has been around in one form or another since Roman times. There are many different variations, but the classic side beloved by kids everywhere is this easy, creamy version.

So good they’d never know the dreaded cabbage was anywhere near it. It’s great for barbecues and picnics, but you can serve it as a side dish with just about anything.

Fun fact

Coleslaw comes from the Dutch word for a salad called “koolsla”, which means, literally, cabbage salad.

Ingredients (serves 4)

  • ½ head white cabbage, finely sliced or shredded in a food processor
  • 2 medium sized carrots, peeled then grated, or shredded in a food processor
  • 1 small, white onion, finely sliced
  • 2 tbsp raisins (optional)
  • 2 tbsp mayonnaise
  • 2 tbsp natural yogurt
  • 1 tbsp white wine vinegar
  • Salt and pepper to taste

Method

  1. Whisk together the mayonnaise, yogurt and white wine vinegar in a bow.
  2. Combine the vegetables together in a bowl (it’s easiest to mix with your hands), stir in the dressing.
  3. Check for seasoning and serve.
